Slow-Cooker Chicken Tortilla Soup
This soup is unbelievably good! I made it without altering any of the instructions or ingredients and it was perfect. There are only a few recipes that when you come across them you know instantly you are going to put them in the family recipe book... this is one of them. We ate the entire thing in one night and wished there was more!

Peppermint Meringues
The only reason why I'm giving this recipe a 4 stars is because this is the first time I've made Meringues so I don't have anything to compare it to. I made them exactly how the recipe presented and they tasted wonderful. I thought the candy on top added the perfect light peppermint accent to these meringues. I had no problem with with them browning or with the texture. The one piece of advice I would give when making this is to whip more than what you expect to. When I thought the whites were done I whipped them on high for a minute or two longer. I did the same with the final mixture and it turned out perfect. Thanks for the recipe!

Gouda Spinach Quiche
I was looking for a quiche recipe that was different than what I was used to making and I found it in this one. I've never tasted gouda cheese let alone use it in a recipe so I thought I would try this. I liked the recipe a lot but I did make some modifications to it. I could tell that there was no way I was going to use 8 cups of fresh spinich so I eyeballed the amount I used. I could also tell that 4 eggs and 2 cups of half and half were not going to fit in the pie crust so I halfed the amount. I did season the cream/egg mixture with garlic and some cayanne pepper because we like a little kick to our food. This was a great change and everyone loved it. Thanks!
