I am a proud Marine Corps wife, living for the moment in VA Beach. I love being able to surprise my husband with different meals every day. I enjoy cooking different types of cuisine, and I am always trying to challenge myself with new recipes. I am very confident in the kitchen, and really love being able to feed people food that is better than anything they could get in a restaurant.
My favorite things to cook
I love cooking Greek and Italian foods, because of the big flavors. I am learning how to cook more traditional Mexican dishes. I am really love making things up as I go along, and creating my own recipes. I don't work, so I have all day to shop at the farmers market, and grocery stores. I love finding ingredients that look really good, and then creating something from those recipes.
My favorite family cooking traditions
I come from an Italian background, so I love traditional Northern Italian foods. My family only got together at holidays, so most of my memories are of Thanksgiving (traditional turkey and fixings) and Christmas (fish dishes). We BBQ'd a lot when I was growing up, and fresh vegetables from my grandmas garden combined with my grandpas BBQ are favorites.
My cooking triumphs
My 1st Thanksgiving dinner, hands down. I had never attempted cooking such a large meal, for so many people, with so many different dishes, and in such a small kitchen. The turkey came out delicious, so much so that people were actually eating the turkey more than the sides!! I used a lot of family recipes and put my own twists on them. It was ambitious, but it cemented my cooking skills in the minds of my family, and gave me a lot of confidence.
My cooking tragedies
I don't really have any major tragedies, but I have cooked quite a few things that my husband has hated, but that is only because he is picky. No mayonnaise, sour cream, cream cheese, ranch dressing, blue cheese, and a whole list of things he doesn't like. It has forced me to change my cooking habits, but that is not necessarily a bad thing.

Chef Scott's Pico de Gallo
I love this pico!! I am a huge cilantro fan, so I use the full amount. I usually make this the night before I will be using it, so that the flavors meld overnight. I have served this to my Mexican food loving friends from California, and they said this is the best pico they have ever had!!

Three Cheese Garlic Scalloped Potatoes
I made this last night, and it turned out perfect!! I used the specific ingredients that the recipe called for, and it cooked in the correct time, and nothing separated, or was uncooked. My husband didn't like the crusty top, but I don't pay attention to that since he is just picky. The only issue I had is not seasoning the dish properly. Because of some of the reviews I had read here, I went easy on the salt, and I wish I had used a little more, but other than that, they were delish!!

Pineapple Stuffing
I always ate this with ham growing up. And I always forget the recipe, so this is the one I use now. This is exactly how my mom makes it, and I make it exactly as the recipe says. Make sure your pineapple is not sweetened, just in juice. This recipe is supposed to be sweet, it ofsets the saltiness of the ham. I don't add anything to it, because for me, every time I have this, it is a childhood memory. I also usually make a double recipe of it. I do use a 9x13 pan, because we like to have it a little drier and with a nice crispy top on it. Even my picky husband gives this one a thumbs up, and it is one of his favorite side dishes.
