Onion Rice
I served this with baked chicken when I had dinner guests over. Personally, I thought it was a little bland. However, I had very little left over and my 2 year old devored it, continually requesting more. Instead of using regular black pepper, I used seasoned pepper. I think this made a difference in making sure there wasn't too much of pepper taste.

April's Chicken Fried Rice
Had leftover onion rice (long-grain rice cooked with chicken broth and onions) and chicken so I opted to make Chicken Fried Rice for lunch the following day. This recipe was a fantastic start to my meal. I added peas and shredded carrots. I scrambled the eggs using the same pan by just pushing the rice, veggies and chicken to the sides and cooking the eggs in the center. Made clean up that much easier. I also added seasoned pepper for a bit of extra flavor. My boyfriend and I both thought it was wonderful.
