One Bowl Chocolate Cake III

Delicious! Like another reviewer, I halved the recipe and it made 12 cupcakes. The batter was really liquidy, so I used a liquid measuring cup to pour it into the cupcake liners. I frosted them with my Grandma's cocoa frosting. Homemade frosting is much more important than homemade cake! **Melt together 5 tbsp butter or margarine with 5 tbsp cocoa add 1 lb powdered sugar and a little milk to mix. ** I used a hand mixer to smooth out the frosting, and piped them on to the cupcakes. I love that the recipe can be made with "staple" ingredients. This one is going in the family recipe book. They were awesome, and I am my kids' hero :)

Hash Brown and Egg Casserole

I'm giving this 4 stars with some changes. I made it first following the recipe except for doubling the eggs. The crust ended up really bland. Second time around, I tossed the hashbrowns with 1/4 c margarine and 1/2 cup minced onion and 1/2 tsp seasoned salt and pre- baked for 20 minutes. Then I whisked together 10 eggs and reduced the milk to 1/4 cup. Whisked with Salt. Poured that over the hashbrown crust. Topped with sharp cheddar cheese and Jimmy Dean turkey sausage crumbles (whole package). This was much better the second time around. We enjoyed it with biscuits and gravy. Mashed up together it's heavenly!

BBQ Chicken Pizza

delicious! Loved the cilantro. I used Tyson frozen grilled chicken strips. I heated them in a pan with some BBQ sauce while I prepped the remaining ingredients.

Zesty Slow Cooker Chicken Barbecue

Excellent! My husband, who was born and raised in Memphis said it was one of the best barbecue sandwiches he's ever had. We served it on a bun with homemade Memphis- style slaw. The recipe is perfect as written- used a full bag of Wal-Mart's boneless skinless chicken breasts, and for the barbecue sauce I used Jack Daniels' Original.

Southern Dill Potato Salad

Excellent potato salad! My husband said it's the best he's ever had, and he LOVES potato salad! Followed the recipe as written with light sour cream and a mixture of light and regular mayo. Definite keeper!

Unbelievable Chicken

Awesome! I'm so happy to have found a good chicken marinade recipe. I pounded out the chicken breasts to about 1/2 an inch thick before marinating it in a large ziplock bag. Total cook time was about 8 minutes on the grill. The chicken came out very tasty and juicy. I served it with oven roasted red potatoes an a salad. Even my picky 8 year-old that usually only eats chicken in nugget form gobbled it up!!

Pecan Pie Bars I

These were very good and easy to make. I used a 9x13 pan and changed the recipe to 24 servings. I did not have a problem with the bars sticking at all. I love chocolate bourbon pecan pie, but wanted to have it in smaller portions. I added 1/4 cup bourbon and 6 ounces (half bag) of semisweet chocolate chips to the filling mixture. It turned out really good! This is a great easy recipe!

Spaghetti Pie II

DH was asking for the spaghetti pie I used to make when we were first married, and I couldn’t find my recipe. This is the closest I could find, and really good! Better than what I used to make, according to my DH. I used lean ground turkey instead of the beef. I doubled the recipe and cooked in a 9x13 pan, because we wanted leftovers. I seasoned the turkey with a little seasoned salt while it was cooking with the garlic, onion and tomato to add flavor. I used store- brand jarred spaghetti sauce instead of the canned tomatoes & paste, and added 1/2 of a 4-ounce can of tomato sauce to spaghetti sauce while it was cooking, so it wouldn't be too dry. I also seasoned it with a little oregano and crushed red pepper. The only other thing I changed was to use 3 eggs instead of 4 (the doubled amount) in the noodle mixture, and I blended the cottage cheese in the blender so there weren't any large curds, because DH doesn't like cottage cheese. I also cooked it for about 30 minutes before adding the cheese. It may be because my oven doesn’t get hot enough, Overall, great recipe!

Chicken Souvlaki Gyro Style

Wow! This recipe was really good! My husband couldn't stop raving about how it tastes like it came from a greek restaurant. It's health-friendly too. I strained some fat free plain yogurt all day while I was at work and used that for the yogurt part of the sauce. Also, I added a little more garlic to the sauce.

Good Old Fashioned Pancakes

1 tsp seemed like a lot of salt to me, and you could taste it right away in the pancakes. I prefer the buttermilk pancakes II recipe.

Grandma B's Bean Soup

An easy recipe! My first time cooking bean soup/and using dry beans as well! My family really liked this recipe. It was really tasty with a crumbled up corn muffin mixed in- Yum! I added a couple of bay leaves and some salt and pepper as was suggested in other reviews. I also, for time's sake, finished it up on the stove top. A definite keeper!

Chocolate Bourbon Pecan Pie

Great recipe! It was great just the way it is written, but VERY sweet. Next time I may use less chocolate chips. I used a deep dish 9" frozen pie crust, and it was just the right size.

Baked Potato Salad I

Great crowd pleaser! Pretty to look at too :) I left out the olives, used red potatoes (skin on), 1/2 mayo, 1/2 sour cream, green onions, and sharp cheddar cheese. I cooked the bacon in the microwave to free up my stovetop for other things I was making for my dinner. I do wonder, though if the step of cooking the potatoes for 10 minutes in boiling water is a necessary step when they're going to bake for an hour in the oven...

Tortilla Rollups II

Great recipe! Simple and easy. These were the hit of a recent potluck. I used sharp cheddar and 1/2 c salsa instead of the 1/4 c. so the filling was more spreadable. I was able to use 9 out of 10 tortillas. The only problem was there were no leftovers! I'm anxious to use this versatile recipe again and experiment with different fillings. Thanks from another Debbie.

Buttermilk Pancakes II

Great recipe! For the kids I scale the recipe to 4 servings. I make it with regular milk (2 % or skim depending on what I have in the fridge) with a tablespoon or two of vinegar added to it. My kids love it, and hubby said they were the best pancakes he's had in a long time. He grew up on Aunt Jemima box mix.
