Pan Seared Salmon II

First I have to say that this was my first time to have salmon. I didn't like it, but my husband did. We skipped the bell peppers. The lemon/garlic sauce is a must for flavor. It is NOT spicy as the description states though.

Pan-Fried Asparagus

This was my first taste of asparagus. I loved it, husband hated it. I followed the recipe exactly except for adding the garlic last and tossed it with grated parmesan at the end.

This recipe was just okay. It was a little dry and I even used half mayo half sour cream. Next time I am thinking of adding butter and more salt to the mixture. I also just nuked the potatoes then finished them in the oven. Something I will try again.

Salsa Chicken Rice Casserole

I have to say first that I didn't follow this recipe exactly as written. I modified it because it looked like it would be very bland as written. That said, here is what I did: I first boiled my chicken in water seasoned with PC Mexican Seasoning. I then removed the chicken and used that water to boil my rice in. I mixed together the cream of chicken, cream of mushroom, Rotel (instead or salsa), cheese, the chicken-chopped, and about another tablespoon of PC Mexican Seasoning. To bake, I layered half the mixture on bottom, then the rice, then the rest of the mixture with cheese on top. With adding the seasoning it was edible, but still bland.

Laura's Unbelievable Chicken and Pasta

Way better than I thought it would be! I only used 1/2 bag of frozen spinach and subed half can diced tomatoes (drained) for fresh. I also browned the chicken first in olive oil with garlic powder and italian seasoning. Top with grated parm for a pretty presentation.

Chuck's Favorite Mac and Cheese

Way too much sour ceam taste. I was out of cottage cheese, but other than that followed the recipe to a T. I'll try it again but with less sour cream and maybe some mayo instead. And I will add more cheese next time. It was okay tasting, just not like mac n cheese.

Apple Crisp II

This was very good. I added a dash of nutmeg. I also cut in the butter with a pastry blender, instead of pouring melted on top. I then pressed it evenly across the top to make a pretty presentation. Great filling to crisp ratio.

Tomato-Cream Sauce for Pasta

This recipe gets 4 stars because it is a little bland as is. It is a great starting place. I sauted hamburger meat in the olive oil, onion and (2 cloves) garlic. Then added addional 1 tsp italian seasoning. I also used brown sugar per another review, and half & half bc that is what I had. It will be watery at first. Let the juices simmer off before you add the dairy. It will thicken on its own.

Artichoke Chicken

Really great easy recipe with ingredients on hand. Only two changes: I used a jar of marinated artichokes and drained the juice to cook chicken in. I also halfed the called for amount of mayo and used half sour cream instead. Put it in a cassarole dish with al dente penne pasta and baked with grated parm on top until bubbly. Delish!

Old Fashioned Coconut Cream Pie

Very tasty and easy! It does take a while to heat up though. Mine never boiled, but it did thicken up and made a great pie. After reading the reviews I used 2 cups (1 can) coconut milk and 1 cup half and half. I also did 1/4 cup cornstarch and 1/4 cup flour. Tasted great!

Pumpkin Bars I

This should be called pumpkin cake, but other than that they were great. I topped them with the pumpkin bar icing from this site. I also just used a whole large can of the pumpkin pie mix, and didn't add any additional seasonings. Worked out great!

Honey's Butter Cake

This recipe tasted great, like a snickerdoodle cake. However it only gets 4 stars because the cinnamon sugar layer turned out hard as a rock. Next time I'll make it in a 9x13 and mix in the layer a little more.

Easy, Eggless Strawberry Ice Cream

This recipe is amazing! Very light and smooth texture. I used one cup of heavy cream, one cup half and half, and 2 cups of 1% milk. I also used a thawed tub of frozen strawberries, and mashed them. Quick, easy, and very tasty.
