Mexican Bean Burgers
Make these quite often -- even tried one crumbled on the Mexican Whole Wheat Tortilla and it was great! Definitely saute the onions and peppers first. Subbed oats for the whole wheat flour and crumbled dry toast instead of using bread crumbs.

Spinach Minestrone
I'm going to give this soup the benefit of the doubt because I used low-sodium instead of reduced-sodium chicken broth. Having said that, I thought it needed salt, though on principle I would never add any myself. Freezes and reheats very well.

Mexican Whole Wheat Flour Tortillas
This recipe is the main reason I keep whole wheat flour in my dorm. They are simple and easy to make. I use canola oil instead of shortening and they come out quite well. You can use 3/4 c. of oil for the tortillas instead of 1 c., but they're a little drier cooked that way.
