Corn and Black Bean Salad

This was so easy to make and it tasted AMAZING! I can't stop snacking on the leftovers. I served this salad along with Jay's Jerk Chicken, Black Bean and Mango Salsa, and Tropical Salad at a party on Saturday night. They were all hits.

Avocado Salsa

Delicious and very easy. I used my food processor to chop the onion, garlic, and red pepper -- which got them down to a nice small shape. This was the 'hit' of my SuperBowl party this year.

Andie's Stuffed Mushrooms

Great recipe for stuffed mushrooms. I used half hot italian sausage and half ground beef. I ended up having lots of filling left over so we used it as a stuffing for omelette the next morning with great results.

Actually Delicious Turkey Burgers

There are delicious. You won't miss the beef I promise. These burgers are moist, juicy and packed with flavor. I used the ground turkey that includes dark meat. In the past using the ground turkey breast has no been as successful.

Layered Chicken and Black Bean Enchilada Casserole

This was very good. I ended up cutting the sauce in half because my dish was too shallow to accomodate the full amount. The finished result was still delicious. I also forgot to cover the dish while baking. My oven was a bit dirtier as a result but the recipe seemed to turn out just fine. I think next time I will sprinkle the top with slice black olives and chopped green onions for a decorative effect.

Goat Cheese and Spinach Turkey Burgers

These were very tasty. I used feta cheese, however next time I think I will use chevre -- as it is a creamier, richer tasting cheese. This was a great recipe for my husband who is on a low carb diet.

Tuscan Soup

I didn't have evaporated milk, so I substituted 1/2 cup bread crumbs and 1/2 cup fat free sour cream. I also added a can of Italian Kidney beans for added substance.

Cafeteria Macaroni and Cheese

Great recipe. I was skeptical at first because it seemed way too easy, however it turned out great. I did alter the recipe a bit by mixing in a 1/2 cup of fat free sour cream at the end (before adding bread crumbs to the top).

Award Winning Soft Chocolate Chip Cookies

Awesome Chocolate Chip Cookies. These are the best I've ever made or tasted. This recipe definitely lives up to it's 'Award-Winning' claims. I have to admit I was skeptical about adding the vanilla pudding mix, however one try and I am now a believer.

Hoisin Beef with Shiitake Mushroom Sauce

Great recipe. I bought some really high quality steaks from Whole Foods which I am sure made some of the difference. However, the mushroom sauce was excellent. I would definitely make this again.
