Apricot Pork Tenderloin

This was very easy to make. I didn't bother with rubbing butter on the pork. Instead I sprinkled salt, pepper and some fresh rosemary on it prior to baking. For the sauce, I used fresh garlic, sherry and apricot jam. I didn't bother with the honey. My family really liked this dish. I served with roasted potatoes and sautéed sugar snap peas.

Best Butternut Squash Soup Ever

This soup was very tasty,very tasty. I found pre-peeled, pre-cubed butternut squash at Costco that made preparation super easy; it was in the cold room where you find lettuce and sugar snap peas.

Sweet, Sticky and Spicy Chicken

This was really easy and good. I steamed the broccoli seperately and added it to the end. I also coated the chicken with flour prior to cooking and added 1/2 cup of chicken broth to the sauce when cooking. Overall very good. Would definitely make again!

Rocky Road Ice Cream

This recipe is outstanding. After trying a few different recipes with lackluster results, I tried this one. My family loved it! Best ice cream ever was their response. I'm going to see if I can create a 'vanilla version' by omitting the cocoa powder.

BREAKSTONE'S Creamy Sour Cream Chicken Enchiladas

These enchiladas were super easy and good. I had roasted a whole chicken Sunday and had leftover meat. So this was a great to make it into a meal. Next time, I think I will only use half a can of soup and perhaps increase the sour cream. I also ended up with only 7 enchiladas instead 12, but I made them really big. The 7 I made filled up the entire pan. One each was enough for dinner.

Mom's Big Burgers

These were really good. I added a few dashes of worsheshire sauce, but other than that didn't change a thing. I served with sliced tomatoes, avocados, onions, pickles and lettuce. I had french fries on the side.

I served this over the weekend at my senoritas and margaritas oscar party. They were a huge hit! The girls all love it. They said it reminded them of a'top shelf bartenders' margarita'. I save time, I squeezed the lime juice ahead of time and mixed up a big batch of these when everyone was ready for a refill.

Hunter Style Chicken

This was great. I used canned tomatoes (Muir Glen 28 oz can) and it was great. Got bit thick at the end of cooking (I kept it on the stove for 3+ hours), so I added broth and wine to thin it out.

Cheesy Ranch Chex® Mix

I made this to munch on during the football games this past Sunday. Everyone loved it so much I had to make a second batch during half time. My kids have asked that I put some in their school lunches as snack. I'm going to add some whole almonds to the mix so to add some additional 'brain food.'

Green Beans with Cherry Tomatoes

This was a very nice combination of flavors. I steamed the green beans first (they stay crisper). I also sauteed the tomoatoes whole in olive oil and garlic to get things started (until their skin started to soften a bit). Then I added in the rest of the ingredients. The cool part is you could make the beans the day before to save yourself a bit of time. I made this on the grill using the side burner. GOoes great with chicken or white fish.

Beef or Chicken Marinade

I used this recipe with a thick top sirloin - it turned out fantastic. I marinaded the meat for about 30 hours. I made two steaks, so I used the leftovers for steak sandwiches. Sooooooo good.

Byrdhouse Blistered Cherry Tomatoes

This recipe is really easy and delicious. I used olive oil, sliced garlic and then the fresh basil 'paste' you can now find in a tube in the produce department. This is a great recipe for using up extra tomatoes.

Lemon Icebox Pie I

Note to self -- next time don't try to whip the meringue topping by hand.... use mixer. Yes, I tried it by hand but before I got it to peak my arm cramped up. Stuck it in the over anyway. Surely not as pretty as it was intended to look, but still tasted great.

Chocolate Cream Pie I

Well, I must confess I am the world's WORST baker. Seriously, even if I am cooking ready made cookie dough or a cake from the box, somehow I find a way to mess it up. That said, I was so delighted to find dessert recipe that turned out great, no matter how I butchered it. I did add an extra square of chocolate. I mean, what's not to like?

Half-Time Nibblin' Dijon-Ranch Chicken Wings

I've been looking for a wing recipe that is not deep fried. This one is awesome. Who would have though ranch dressing would be the hidden secret to big flavor? These were also super easy to make. I might try this same recipe to make chicken strips for the kids. Go Patriots!

Bacon for the Family or a Crowd

This method of cooking bacon is a keeper. It's way easier that frying up multiple batches in a frying pan. It also cooks them up perfectly and crispy (something the microway is not good at). It also frees up your cooktop and your hands for other stuff.

Beef Stroganoff III

This was fast and easy to make. I used a sirloin steak cut up into strips. I also used fresh mushrooms rather than canned. Since the meat was fairly tender to begin with, I skipped the 'simmer for one hour' step. My dish was ready in about 30 minutes. I served it over hot egg noodles.
