My favorite things to cook
Light Italian is a favorite thing to cook, I guess before I started cooking in earnest I thought Italian always meant heavy fatty creamy sauces and heavy pastas and have happily found that there are a lot of lighter Italian dishes. I like a lot of the lighter recipes that Giada De Laurentis (sp?) does on the Food Network, I also like to bake many different kinds of cookies from offbeat websites found in Google. I am also finding out now that some of the recipes in the Williams Sonoma website are really good too.......
My cooking tragedies
Two words to describe my tragedy: Tofu Stroganoff!! When I first started really cooking in earnest, I thought I might like to be a vegetarian. Too many all veggie dishes always seemed to be made with Soy Sauce and Ginger, there didn't seem to be much variety. So I thought maybe if I tried Tofu dishes. Not much variety there either from what I saw. When including chicken, fish, etc, seems that there is more variety in recipes to choose from.

Chicken Breasts with Balsamic Vinegar and Garlic
This was a fun and very delicious dish to make. I did everything as written except that I used boneless chicken thighs instead of breast meat, thigh meat always seems to turn out moister for me. I only browned the thighs for about 2 minutes max on each side, pulled them out, sauteed the mushrooms and garlic, then added the thighs back in with the broth and vinegar, and spices, to simmer for 20 minutes on a low simmer. They turned out perfect. I almost missed the end step of reducing the sauce down, then adding butter at the end, I am so glad I did this, the sauce turned out great. I will make again.

Spicy Filet Mignon
MMMMMMMMMMM, this is really good. The only thing is that I don't have a grill, this recipe works just fine with rubbing the spices on the meat and then broiling it rather than grilling it. Didn't change a thing to the recipe, it is great as written.

Easy Broccoli Quiche
I followed a couple of the suggestions of other reviewers, and used less milk, and used fresh broccoli, putting the broccoli into the crust, fresh, not cooked, only sauteeing the onion and garlic. I also add diced ham and use a mix of shredded jack and cheddar, not mozzarella, just a preference. I go by the words, "when the center is set" to tell if it is done, not a strict 30 minutes in the oven. This is VERY good. I always make a whole wheat pasta salad with artichokes, olives and Italian dressing, for a side dish for this quiche. After making it, I end up with a bit to clean up in the kitchen, but for the nights following, all I have to do is pop a slice of the quiche in the microwave and have pasta salad out of the fridge, easy dinners for the nights following. Plus, after this quiche being in the fridge at least overnight, the flavors blend or get stronger afterward...it tastes even better heated up as leftovers. thanks for the recipe.
