Spinach Lentil Soup
I haven't had lentil soup in years & after reading several receipes,this was the one I decided to try. It is great! I used red pepper powder instead of flakes as I wanted to keep it mild. I put less rice to keep soup from getting too thick, and I had an extra mushroom that I sliced up & threw in there. However, I needed to add salt or otherwise, it was like beans in water to me. I also had chopped frozen spinach, which seemed to work fine. Great health conscious soup, definitely keeping this receipe!!!

Shepherd's Pie Daddy's Way
I had all of the ingredients on hand except for the American Cheese, but used Colby Longhorn instead & it melted nicely. My husband doesn't like alot of vegetables or seasonings so this simple receipe was perfect for him. It was still very flavorful. He ate most of it except for maybe a spoonful. Will definitely make it again!

Easy Cranberry Granola
Fun & easy to make. I've made this a few times already & usually add raisins. Great for healthy snack or homemade cereal. I suggest after baking you spread it on wax paper to allow it to cool & get crunchy. It might stick on pan as it hardens.
