Crispy Herb Baked Chicken

Such a good, easy recipe. I only buy boneless, skinless chicken breasts, and they worked well. I seasoned the chicken pieces with poultry seasoning before topping with mixture. I added some bread crumbs to the dry mixture, along with Italian seasoning, garlic powder, and onion powder. I baked the chicken on a baking rack on top of a cookie sheet to allow the bottom to crisp. Definitely a keeper.

Catherine's Spicy Chicken Soup

This soup is great! I followed the advice of some others and used a crock pot to simmer and topped with sour cream at the end. However, I ended up putting the soup on the stove and mixing in sour cream. Follow the recipe as written, and the dish will be a hit.

Broccoli Chicken Casserole I

This was my first casserole, and it is definitely a favorite. Following the suggestions of others, I used one can of cream of chicken and one can of cream of mushroom. I used a frozen bag of mixed broccoli, cauliflower, and carrots. I mixed all of the ingredients together, then topped with the cheese and a full box of prepared stuffing. This was a large, easy, tasty meal.

Fried Rice with Ginger, Hoisin, and Sesame

This turned out great. I doubled the rice, water, and garlic to feed a larger group. I used frozen broccoli and frozen mixed peas and carrots. There was a faint peanut flavor, which would accomodate a Thai meal also. I left out the bbq sauce and added a little stir fry sauce instead. I definitely did not use 1 cup of sauce as written. I served it with a chicken ginger soup, and it was a complete meal. Thanks!

Zucchini Pasta II

This dish turned out very well. I didn't have cream cheese on hand, so I used half & half and corn starch instead. We like our dishes with a lot of sauce, so next time I'll add more chicken broth and be sure to try with cream cheese. I had a thick pasta on hand, but will also try with a smaller noodle. Thanks for the recipe!

Simple Turkey Chili

I made this dish with a few changes. I sauteed the onions and garlic in olive oil, then added ground turkey. I used both kidney and black beans. I doubled the spice measurements suggested, plus added about 3 tablespoons brown sugar and a 7oz can of diced green chilis. I used one cup chicken broth and 1/2 cup red wine in place of water. I put the ingredients in the crock pot for a few hours on low to give the ingredients time to meld. All three people over for dinner raved about the recipe. Thanks!

Sweet and Spicy Stir Fry with Chicken and Broccoli

I followed the suggestions of others and doubled the sauce, but it still did not yield much. I would suggest tripling if you want enough to cover the stir fry and rice. The dish was spicier than expected, even though I cut down on the chili paste. I used fresh broccoli and added water chestnuts and baby corn.

Stuffed Peppers My Way

This recipe turned out great! I made a few changes based on suggestions of comments and what I had available. I cooked red onion with garlic and seasonings, then added ground beef. After draining the oil, I stirred in the cooked rice and one can of diced tomatoes. I used red and orange peppers which I cooked for 25 minutes, stuffed with mixture, then topped with feta cheese. Put back in the oven for 5 minutes to heat through, then broiled for another 5 minutes to brown cheese. The stuffed peppers were a hit.

Chicken and Shrimp Linguine

I made this dish with a few modifications as suggested by others. I used 1% milk and fat free half & half to shave calories, with cornstarch to thicken. I cooked the chicken in olive oil and garlic, cooked the shrimp next, then added the wine last. I also added red and green bell peppers to the dish. I also used more seasoning than directed for my family's taste. The dish turned out well.

Creamy Shrimp Stuffed Cherry Tomatoes

I made this for a holiday potluck, and it went quickly. I had crab on hand so I used that in place of the shrimp. I added a little extra horseradish and lemon juice for extra flavor. At the suggestion of others, I used Old Bay seasoning in place of salt. Coring the tomatoes was very time consuming, but the dish was worth the effort!
