This was pretty darn good. We forgot to drain the fat but it was still delicious and the chicken was super tender.

This was a great basic recipe. Very easy. I also used what I had on hand. I did not have beans so I used some things from Tastefully Simple - the corn black bean salsa inside the enchiladas. Then I used enchilada sauce on top and underneath. I cooked the chicken in their S.W. Season Salt to add flavor and reduced the cream cheese to 4 oz. The entire family loved it.
