Layered Chicken and Black Bean Enchilada Casserole
Very Good only making it a little healthier, I would use low fat or 2% cour cream and cheese. It was YUMMY

Gumbo Style Chicken Creole
OH MY CAN'T GET ENOUGH. THIS WAS THE BEST. The only thing is that my chidren thought it was too spicy so I will split the recipe and make one batch just with diced tomatoes. Also I used two cans of tomatoes. GREAT EATS
