Crustless Spinach Quiche
This was really easy and delicious! It took me about 15 minutes of prep and the 30 minutes at 350 was right on. The spinach flavor is pretty strong, so I might include something else with it like mushrooms next time, just to have multiple flavors. This will be a go-to recipe for me every time I'm on a low-carb kick!

Three-Bean Soup
I did not care for this. It smelled great when it was cooking but that's as far as it went. It was more like a stew than a soup, too.

Smothered Filet Mignon
This deserves ten stars. It's the best steak marinade/recipe I have ever had, and I compare every steak I eat now to it. My husband and I never get tired of it -- we use it for all steaks, not just filet mignon. I also gave it to a girlfriend whose husband is a picky eater -- they broil it and LOVE it. I often top the steaks with feta instead of blue cheese, since blue is often an acquired taste for many. This is perfect!
