Iced Pumpkin Cookies
This recipe made me fall in love with baking! Every fall I make these and they are a hit! This season already I've made 10 dozen of them to pass out to friends and family. Fall just isn't the same without these cookies. One hint: when placing the dough on cookie sheets use two spoons and then after all the dough is placed go back and shape the cookies with your hands. I found this way keeps my hands clean and gives the cookies a more rounded shape.

Cool Whip Cookies
Refrigerate the dough! It makes or break this recipe. And high altitude people, don't forget to add more flour! Great recipe nonetheless, but put the dough in the fridge for an hour or so and then the cookies won't be as flat.
