Spanish Rice II
Added some red bell pepper and a can of tomato paste (because I had some of both on hand that I wanted to use up), and added a can of corn. I really expected this to be kind of bland but it was SO GOOD. Hubby and I scarfed it right down. Will make again and again!!

Tiramisu Layer Cake
Hubby said it's the best tiramisu he's every had, and he has eaten his fair share of tiramisu! I followed other reviewers' suggestions and made 2 coffee cake layers and 1 white cake layer. I also doubled the Kahlua everywhere it was called for. The second time I made it, I also doubled the entire amount of filling (at hubby's request), and am liberal when pouring coffee on the cakes. I am an abysmal cake baker and my cakes always stick to the pans and look like crumbly disasters. The nice thing about this cake is that there is enough frosting and coffee that it doesn't matter, and always looks great. I use "pirouette" hazelnut cookies on the sides and choc-coated espresso beans for garnish.

Quick and Easy Alfredo Sauce
Words cannot express how much I love this recipe. I usually use low or no fat milk and cream cheese and it's still awesome (if a little thin). I always throw in a few crushed garlic cloves in addition to the garlic powder to more closely mimic the sauce at my favorite italian restaurant.
