It was altogether good, but me and my family found it bland. More spices might me a welcome adjustment

Quick Eggplant Parmesan
Yummy! I think I should have peeled the eggplants though, since they weren't cooked twice they were kind of hard.

Macadamia Nut Chocolate Chip Cookies
Pretty darn good! I made these but would have liked to have used white chips. I also subbed 1/2 almond extract and 1/2 vanilla for the vanilla. Yummy!
