Best Tuna Casserole

Reviewed: Dec. 4, 2009
Great classic tuna noodle hotdish (as we call it in Minnesota). I didn't quite have enough frozen peas so I added a stalk of celery. Only used a couple of tablespoons of onion. I also added the onion and celery to the boiling noodles for the last three minutes to soften. The potato chips are a MUST!

Rich and Simple French Onion Soup

Reviewed: Dec. 4, 2009
I made this for my Project Runway finally party. My guests LOVED it. Someone brought a nice red wine so I threw some of it in as well. It made only 6 mug size servings which was perfect but I was wishing for more the next day! I caramelized the onions which took about 40 mins then used red wine to scrape up all of the brown bits in the pan before adding the rest of the liquid. I had to use Swiss cheese and it was wonderful. Be sure to toast your bread. I put slices of rustic bread in the toaster then right before adding it to the soup, I stuck it back in the toaster to crisp it up even more. THIS IS A KEEPER!

OMG. This is the best salad ever. **For those who like things spicy HOT try hitting the pecans with a shake of cayenne pepper while they are still warm.

Blake's Best Steak

Reviewed: Oct. 4, 2009
The whole point of letting the meat sit for 15 minutes is to bring the meat to room temp before grilling. Returning to the fridge is exactly what you should NOT do. PS- if your steak is too small don't blame the recipe! LOL!!

Hot Bacon Dressing

Excellent recipe but a little too sweet for my taste. I will cut the sugar to 1 cup next time. Serve over spinach with chopped hard boiled eggs for garnish. Yum!

Brown Sugar Meatloaf

Reviewed: Sep. 21, 2009
Only giving this 3 stars because I really didn't like the bits of crunchy onion. Next time I will sub onion powder. I really liked the sweetness from the brown sugar glaze. Put the glaze ON TOP!!

Soggy mess. Yucky flavor. The texture made me gag. I must have done something wrong because these are horrid.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Aug. 23, 2009
I found this to be good but not fantastic. I didn't use the enchilada sauce. I put boneless skinless frozen chicken breast into the crock pot and then added the rest of the stuff. You really do not need to pre-cook the chicken. It turned out good.

I made this for my sister's birthday cup cakes. It is absolutely wonderful! Fluffy, rich and tastes so much better than frosting from a can and almost as easy!

Chicken In Basil Cream

This is a wonderful recipe for showing off. I used a fresh roma tomato from my garden instead of pimiento. I also added about a teaspoon of lemon juice with the chicken broth to brighten the flavor. The sauce turned out to be a perfect consistency.

Slow Cooker Chicken and Dumplings

Reviewed: Apr. 8, 2009
Wonderful surprise! YUMMY and so EASY to make. I added a couple of carrots and 3 stalks of celery. I used one family size can of cream of chicken soup and a 14oz can of chicken broth to 3 frozen chicken breast. I added the "dumplings" and let cook another 2 1/2 hours. The best part, VERY LITTLE clean up!

Hamburger Hot Dish

VERY GOOD! Just like I remembered my Mom making it. Instead of putting it in the oven I put it back in the pan and heated it on medium, covered, for about 15 to 20 mins. Also my Mom always added about 1/4 cup sugar to this recipe.

Best Beef Dip Ever

Reviewed: Jan. 31, 2009
WONDERFUL RECIPE! I did change it by adding 2 cups of red wine in place of 2 cups of water. I was also out of fresh garlic so I used about 1 TBS of garlic powder instead. Of course the roast was from a local meat market so it was fresh and delicious. This is in my recipe box!

Just like the the candy from corner store. I would NOT use a glass pan again. It did stick something awful. After I managed to get it out of the pan it tasted just like I remembered! Thanks for the recipe.
