About this Cook
Vegetarian American of Euro & Chinese descent currently married to an omnivorous Pakistani and living in a tiny country in the Middle East. Food inspirations abound, but trying to make the full variety of foods I like using ingredients from the local market has been a challenge, as well as coming up with tasty vegetarian dishes that don't leave my hubby craving a cheeseburger from McDonald's afterwards. Fortunately, Allrecipes has helped me discover new and wondrous dishes to make using locally available spices that are hearty enough to tame some of the carnivorous cravings coming from the other side of the dinner table. The adventure continues...
My favorite things to cook
Cheesy stuff (pasta, casseroles, and deep dish pizza) Ricey stuff (Chinese style stir-fry, Spanish rice, rice with lentils/veggies/Indo-Pak spices) Hearty vegetable stews with whatever is in season, Scrumptious appetizers from stuffed mushrooms to deviled eggs, Yummy desserts such as chocolate mousse, chocolate chip cookies, cheesecake, whole orange cake and pumpkin pie, Breads of all types including zucchini bread, corn bread, French bread, artisan breads, chapati, paratha, etc.
My cooking triumphs
My first two attempts at deep-dish pizza have been raging successes, even with a very non-traditional vegetable puree taking the place of pizza sauce on the second one.
My cooking tragedies
Reoccurring cooking tragedies involve forgetting to hit "start" on my phone timer when I put a batch of cookies in the oven and not realizing it until a few minutes after I should have taken them out...those precious few minutes make all the difference between heavenly melt-in-your-mouth cookies and rock hard faux-cookie atrocities. :(

Carrot Cake III
Excellent recipe, I prefer to use Cream Cheese Frosting II with a dash of allspice added for a less sweet, deliciously cream-cheesey frosting.

The Best Unbaked Cherry Cheesecake Ever
Cut down on the sugar and mix a little fruit jam in with the cream cheese. Be sure to fold the softened cream cheese in with the whipped cream rather than beating it together because the cream will un-whip and the cheesecake will be extremely runny.
