Cake Mix Cookies VII
These are really great, easy cookies. I've made several variations on them in the past, and they've all been great. Our favorites are to use yellow cake mix and 3 snickers bars, or yellow cake mix and 3-4 toffee bars broken up. They are really awesome, but they disappear very quickly!! I plan to try peppermint pieces and chocolate chips for Christmas.

Mexican Rice II
This is good rice, but it's missing something. I'm from Texas, and down here, no Mexican dish is complete without cilantro! This is a very important ingredient. It adds a much needed kick to everything. You don't need a bunch of it, just about 1/4 cup will be plenty. If you're not familiar with it, just use a little until you get your taste figured out. Just add it in when you add in the liquids. It's great.

Two Ingredient Pumpkin Cake
This cake is the best! I followed the advice of some others and added an egg to the mix with the pumpkin. I also threw a little pumpkin spice in with the batter. I don't understand what everyone is saying about it being too thick. I prepared the cake mix as directed on the box. Then I added the pumpkin and one egg. I almost thought the mix was too runny. It came out perfectly!! Oh! I did add about 1/4 cup brown and white sugar to replace the sweetness that the pumpkin took out. Still, when the cake was done it wasn't too sweet. Actually, it was more like a pumpkin bread. I melted some white icing with some pumpkin spice mixed in and drizzled it all over the cake. It was perfect! The family loved it!
