Pumpkin Bread IV

This has always been a family favorite, just as is and great to give as a gift. Since I make it so often I have lightened up the recipe. I use applesauce instead of oil, I use all egg whites, only 3 cups of sugar and I add 1 cup of flax seed meal. That way I can still make some with the mini chocolate chips and enjoy it too! Try roasting your own pie pumpkin and pureeing it yourself, so awesome!

Yummy Pikelets

These are fantastic! I made them for a tea party my girls were hosting. All the kids loved them. I served them with homemade strawberry jam. I have also added pureed zucchini to the batter and they came out perfect too!

Mom's Zucchini Bread

This is the same recipe I got from my grandmother! It is sooo good. I usually add applesauce or pureed sweet potatoes and then less oil. It is also good with a 1/2 cup of flaxseed meal. I'm always looking to get extra nutrition into my three little ones. You can't miss with this one!

Focaccia Bread

Absolutely wonderful! I have made this about a hundred times! I always get perfect results. It is also wonderful as a pizza crust (done in one hour!). I just use a large jellyroll pan and press it out to the sides. I bake it for 5 minutes and then I top it with pizza sauce, veggies and cheese.

I made this for the 4th and it was perfect! I did leave out the coconut, my little one wouldn't have eaten it. Perfect combination of sweet/tart/sour. Thanks for the recipe!

Absolutely Fabulous Greek/House Dressing

Best Cream Of Broccoli Soup

This is sooo good and easy. I did saute the broccoli stalks with the other veggies and then pureed them together then added the broth and broccoli florets. Then I used the potato masher to break them up. I even made extra and froze the base without the milk for an even faster soup.
