Peanut Butter Pie

Someone made this for me the other day, but mixed the cream layer into the mix rather than on the top. It was delicious, but I could defiantly only eat one slice! The only other improvement that she made was using a base made of crushed oreos, bound with egg and then baked for 5 minutes. Yum!

Basic Mexican Guacamole

I like to make this with red onion rather than yellow, but aside from that, this is my standard guacamole recipe and I find it always works out really well.

Low-Fat Blueberry Bran Muffins

I really enjoyed these. I did not have some of the ingredients so I had to improvise, but I found that they came out chewy and sticky nevertheless. Lovely.

Mark's English Sausage Rolls

I am English and recently introduced my boyfriend to sausage rolls and he loves them! I liked the idea of using mustard and another thing that I like to do is mix the sausagemeat with tomato and bacon. My mum always makes a big roll at Christmas and it is always gone within ten minutes!

Potato Rosemary Rolls

I made this by hand - the first bread I have ever made - and it turned out really well. The texture is lovely, soft and spongy. I omitted the olive oil, and added more rosemary, but I still found that the flavour was a little subtle for me so next time I might add more or follow other reviewers and soak it. Overall though, very good. I will be making these again.

Double Layer Pumpkin Cheesecake

I made this for a thanksgiving potluck, and at the same time made another cheesecake from a different recipe for staying at home. I ended up taking the latter to the potluck and leaving this at home. I made my own graham cracker crust, which is a bit more crumbly than the ones that you can buy in stores, and consequently the thick mixture of the bottom layer did nothing but made a mess of the crust. I ended up having to add more eggs to make the mixture thinner. Whilst the idea of this cheesecake is very good, and after slight modifications it actually turned out ok, I am not sure about the recipe as given.

Slow-Cooker Chicken Tortilla Soup

This was the first thing that I cooked with my new slow cooker, and it turned out pretty well. I put the chicken in frozen, as suggested by other reviewers and this seemed to work. It was a bit spicy, and possibly a bit watery, however. I am a fan of spicy foods, so this worked for me, but it was a bit too hot for some others. I might try using the black beans next time to thicken the broth. Leftovers did not last well in the fridge. I will be making this one again though!
