Mexican Style Cornbread

My first attempt at mexican style cornbread and it turned out awesome! I used white cornmeal, wasn't sure what kind to get and left out the onion. The baking time was right on for me too. The bread was perfectly moist and I forgot to add the cheese at the end on the top, but I was really pleased anyway. My family loved the bread! I can't imagine making any mexican dish from now on without it. Thanks for such a simple and wonderful recipe!

Dawn's Candied Walnuts

These are excellent! I normally use the sugar coated pecan recipe on this site by Carolyn and those are wonderful too. This was a pleasant change though and I'm happy I tried them. I'm getting ready to make my 2nd batch b/c my son is on his way over and I know he will love these too! I was really concerned about the "soft ball" stage b/c I've never heard of that before, but I got out a cup of ice water which was a bit awkward to me, but I cooked my sugar mixture exactly 8 minutes on medium which was a 6/7 on my gas range and they turned out perfect. No complaints at all. Thank you Dawn for a great recipe!!!

Butterscotch Haystacks

These are terriffic! I left out the marshmallows, thought about replacing them with nuts but decided not to. Everybody loved them, I'm making another batch tonight b/c the first "doubled" batch didn't last 1 day. I tried melting the butterschotch chips w/the peanut butter on the first batch, but the chips just wouldnt melt. The 2nd batch I melted the chips first, then mixed in the peanut butter and that way was perfect. Oh yeah, and I mistakenly bought a bag of peanut butter w/ semisweet chocolate chips, I whipped those up too and and they were loved too. My favorite is still the butterscotch though.

Bacon Roll Ups II

Many, many stars! My family inhaled these bacon roll ups! When you think about it, it doesn't seem like the ingredients would work. But, it does and its fantastic. I added a little garlic powder and salt, shreddard cheddar and chives to my cream cheese. Then, on half of the bread, I spread on the cream cheese mixture, rolled it up, then sprinkled brown sugar on my bacon and wrapped it around the bread and secured w/a toothpick. I'm not sure if it was the type of bacon I used but mine did drip. I will definitely use a broiler pan next time b/c it made a mess in my oven and we had to open windows from the smoke, lol. Totally worth it though and I'll be making these again!

Cream Cheese Penguins

These little guys are so darling and fun! I really had a hard time arranging them. I made a double batch with my parents and husband and it was time consuming and not something you just whip up or throw together. But, it is totally worth it! I sat the best little guys out and put the box of our not so perfect penguines up. The penguines were gone in a heartbeat, I don't know who sat out the other penguines but those were gone too. And, I never got to try one. I used the seasoned or flavored cream cheese and I think that was a good suggestion from other reviews. I think these are appropriate at any holiday party and well worth the work.

Easy Cheese Ball II

I really liked this cheese Ball. This was my first attempt at making one and I thought it turned out well. I doubled this recipe and made two. Instead of pecans, I used slivered almonds for one and whole almonds for the other. I shaped them in the shape of a pine cone and arranged the almonds to look like a pine cone. I saw a pic of this somewhere and thought I would try it. I love ranch dressing and ranch flavored anything, so needless to say, I loved the flavor!

Chocolate Mice

Loved the mice, made a double batch for my daughter's sweet 16 and they were a hit. I wavered on the hershey kisses holiday mice and these little guys, but I'm really glad I went with these. Most of the reviews used the mice for halloween, however don't be afraid to use them for other occassions too. They are very adaptable. I used the small pearl candies for the eyes. Most places don't even sell the silver drangees anymore, but the peals are so close to silver and they look very nice too. And, I was going to use red gel for the nose, but they really didn't need it. I used the red licorice for the tail and that really made them stand out. Maybe for halloween I will use the caramel tails, but I love the red around the holidays. Oh yeah, and the cookies.... I couldn't find chocolate wafers anywhere. I was going to use chocolate teddy grams, but I decided to go with oreo cookies that have the chocolate filling. I loved them so much, I will continue with the oreos.

Party Punch IX

Made this punch for my daughter's sweet 16 party. Received many comments and two people asked for the recipe. I followed advice of other reviews and used two packets of raspberry and one strawberry. I also used 3 ziploc bags to freeze the punch in and added 1 bottle of ginger ale per bag. And, I also made green punch just by using 3 packets of lime jello. I served the red punch at the party and that was plenty, I really didn't need to double the punch at all. However, after we got home, we had several guest and they made the green punch and loved it. They said it was better than the red. Thanks for a great punch recipe!

Sweet Potato Casserole I

So we have this bourbon potato casserole dish that we usually make every year. For whatever reason (silly wild hair!), I decided to try something different and to my surprise, EVERYBODY Loved this dish! Yeah, its so good, the compliments were never ending. Then the next day I had a little bowl left over and I as I was getting ready to warm it up, I tried a bite cold and it was amazing too! I can't wait for Christmas. It is sweet but it is such a compliment to your dinner table. Many thanks for sharing this recipe!

Mushroom and Potato Chowder

This is a good chowder. I didn't love it, I could take or leave mushrooms though. But the mushroom lovers did love it! I made it to go with the italian bread bowl recipe from this site. And although I wouldn't recommend it with the bread bowls, it is really good all by itself.

Italian Bread Bowls

oh... these are wonderful, beautiful, delicious bread bowls. I added sugar, italian seasoning and garlic salt to the dough. The bowls baked up so beautiful, I didn't want to serve them for dinner, I wanted to put them on display. Yes, a bit nerdy I know but, I wasn't expecting them to turn out so perfect. I do have to tell you though, I made the mushroom & potato chowder from this site (very good) to go with the bowls. But for some reason they didn't compliment each other very well. And though there were mixed reviews, some seemed to love it. I would not recommend it together. I would love to try the Zuppa Toscana or the Taco Soup with the bowls though. I can't wait to make them again!

Chicken Milano

I thought this recipe was really good, but my husband and kids loved it! I didn't cook the chicken in a skillet, instead I seasoned it with salt, garlic pepper and a little paparika and then grilled it in the forman grill. Because I didn't use a skillet, I just poured the whole cup of chicken broth in the saucepan instead of 3/4 cup after I melted the butter. I also doubled this recipe b/c I have a big family. I made one pan of sauce as directed. The other pan of sauce I added chopped mushrooms for the mushroom lovers. The sauce was definitely delicious, but I guess I was expecting something a little more by all the wonderful reviews. My family though just kept singing praises as they ate. And, of course I will be making this again. My family wouldn't have it any other way. Also, this dish was incredibly fast and easy to make which is a hugh plus in my book!

Seven Layer Taco Dip

Amazing!!! I made this for a b-day dinner as an appetizer and everyone ate it before and with dinner. It was the favorite part of the dinner believe it or not. I left out the bell pepper, put it in an 8 X 8 and it was perfect. I didn't change anything else, why mess with perfection?? I'm not sure how anyone could think it was lacking flavor, it was amazing and I'll be making it from now on!

Tacos in Pasta Shells

Great recipe! I added chopped onion and a packet of taco seasoning to the meat as I browned it. I also added salsa to the bottom of the pan before I added the shells. And I used enchilida sauce instead of taco sauce to cover the shells. I doubled the recipe and with one pan I added the crused chips, the other one I didnt. My husband said he liked the chips on top, one of my sons preferred it without. Everybody else loved them both ways. So good, its one of those fun easy recipes that deserves being made two nights in a row, lol! Grannycancook is one awesome lady!!! :)

Fresh Asparagus, Tomato, and Feta Salad

My husband sauteed the asparagus in olive oil with two cloves of garlic and that was fantastic. I didn't have any feta so my family used shredded cheddar and that worked fine although I can't wait to try it with feta. And, I hate cilantro so I didn't like the flavor it gave the dish. So, next time and oh yeah... there will be a next time, I'll leave out the cilantro.

Super-Delicious Zuppa Toscana

The BEST Zuppa Toscana!!! My whole family absolutely enjoyed this! I made it exactly as written, I can't imagine changing a thing. Some reviews suggested using kale instead of spinach but, OMG... it was perfect. It was a little spicy although all ages loved this soup from 3yrs old to 19. Thank you for sharing this wonderful recipe!! Oh yeah, I almost forgot.. I made the parmesan knots from this site to go with it and it was a perfect combination.

Cuban Grilled Chicken Salad

This was a really good salad. I didn't use fresh garlic and thought the dry minched garlic would work about the same. I wouldn't recommend that, although everybody else thought it tasted good. I couldn't stand the dry crunchiness of the garlic. The rest of the salad was great! I used the George Foreman grill to cook the chicken and seasoned it the way we like. And, the lime juice was great but we also liked adding the pineapple juice from the can of pineapple we used(obvisously we didn't use fresh pineapple and I would recommend the canned pineapple). It gave it a really nice flavor.

Sausage Balls

These were incredibly easy to make and bake up beautifully. I used a baking sheet lined w/parchment paper and a medium size mellon baller to make the balls. The process was quick and I got 38 same size balls. I didn't experience any greasiness that some reviewers have either. I baked for about 16 minutes since they were a little bigger than walnut size. With that said, I never had sausage balls before, so I'm not sure if they just were not my thing or maybe I just wasn't hungry enough b/c I thought these were just okay. The reason for the 5 stars is b/c my son and his friend almost wiped them out. They said they were great!! I still have a couple left from last night and I think I'll do another taste test to see if I've changed my mind. The ease and simplicity of making these is begging me to fall in love w/them. Hopefully I'll have changed my mind, lol!
