About this Cook
I love to cook, I always have. My Nanny was the first person I remember cooking with. We would make cinnamon buns at the lake together for breakfast and I was always amazed that she could make things without recipes and they always turned out so good. I vividly remember sitting in front of the oven with her watching the meringue on her amazing lemon meringue pie so that it wouldn't burn. Now with my nieces I do the same thing and tell them the story of when I was a little girl and how I used to do the same thing. It's a great memory!
My favorite things to cook
I love to cook for my husband and make his favorites which is always some form of comfort food. He loves meatloaf especially, and chilli fries and things like that. Since I have lost 87 lbs in the recent months, I am having fun coming up with new low fat variations of his favorites, and for the most part he can't tell.
My favorite family cooking traditions
My family is Icelandic and I loved to go to the Icelandic festival and eat all the traditional foods. I have been able to re-create many of them. Christmas is a wonderful time for us and when I have children of my own I look forward to teaching them all that my Nanny taught me.
My cooking triumphs
I made vinetarta which is an Icelandic cake for my own wedding, and as involved as it is, it turned out great. My Nanny would have been proud.
My cooking tragedies
I've only made one truly awful thing, it was some sort of mexican dish. I followed the recipe exactly but we just didn't care for it at all. In fact, I had to make a brand new dinner since my husband and I could not eat it at all!!

Chicken Stir-Fry
Pretty decent. I had lots of extra veggies in the fridge that I didn't want to go to waste so this was perfect. I used bean sprouts instead of celery, added mushrooms and red pepper. Left the sauce the same except I added 1/2 cup of water and some brown sugar.

Chipotle Crusted Pork Tenderloin
I would give this 3.5 if I could. It was good, but not something we loved. I found it was too much chili, next time I would cut it down to 1tbsp.

Greek Style Potatoes
First off I followed the directions of another poster: The first thing I did was boil the potatoes in the chicken stock. Since some people commented that the potatoes were a little bland, I added a couple chunks of garlic to the stock. Between the stock and the garlic, I knew it would give the potatoes a great start. I cooked them until they were ALMOST done. Then I drained them and put them in a baking dish. In another bowl, I added the olive oil, (NO water!)zest of an entire big lemon after microwaving it for 30 seconds to make it juicier and all the contents of that lemon. I added fresh rosemary and thyme from my garden along with some Greek oregano and fresh ground black pepper and a little salt. I baked them uncovered for about half hour stirring them half way through and they were delicious! I also cooked them with baby carrots and they were perfect. The potatos came out crispy on the outside and soft and fluffy inside! Ate this with the grecian pork recipe from this site and it was a lovely dinner.
