Michelle's Blonde Chicken Chili
I love the chili! I shred my chicken which I find a better texture than cubed. I add many more spicy peppers to my version, although I do remove the seeds prior to adding them. I have now added a can of black beans for variety. Great to freeze leftovers since this recipe makes a bunch!

Truck-Stop Buttermilk Pancakes
These were pretty good pancakes. I'm experimenting with the liquids to get my preferred consistency. My wife loves them and excess batter will store well in the freezer for an easy breakfast down the road.
