Awesome and Easy Creamy Corn Casserole
My husband and kids LOVE corn so I thought I'd try this, I bumped it up a notch by adding half a finely minced red bell pepper, and a jalapeno out of the garden for a southwest flair. Before popping in the oven I sprinkled on some parmesan cheese and paprika over the top. Let me tell you this smells heavenly while baking, they were all begging for dinner! I served it with Sloppy Joes which is always a favorite. Next time I may add some sharp cheddar, we will enjoy this again soon - It was a hit!!!

Key West Chicken
I was craving a Tequila Lime grilled chicken, I used this recipe as my base and added several spoonsfull of Jose Gold tequila, 3 limes, teriyaki instead of the soy sauce. The garlic smelled so good, the honey was lovely and the margaritas we all enjoyed while the chicken grilled made for a blissful Carolina evening. Of course it would also have been nice to be down in Key West with my toes in the sand! We'll make this again for sure!

Gramma Bertha's Banana Cake
This wonderfully scented hearty moist cake bread was gone before it was cool, I had 4 ripe medium sized bananas to use up. I added a tablespoon of vanilla and a dash of cinnamon. I used a half cup each of white and brown sugar. I have made this many times with either walnuts or pecans, both are wonderful. I bake it 45-50 minutes and check with a toothpick, It was perfect spread with soft butter as the "frosting" My family loves this recipe as muffins or 9 x 13 cake pan size. A holiday favorite for gift giving is mini loafs, I wrap up gift baskets with banana nut loaf, cranberry orange loaf, brownies and cookies to give as gifts with two different Celestial Seasonings teas. My friends and family always expect a home made gift basket from me at Christmas and my daughter loves helping me with this family tradition. HAPPY HOLIDAYS!
