Beth's Spicy Oatmeal Raisin Cookies

I soaked my raisins in hot warter for about 30 minutes. I had a mix of rolled and quick oats. I was baking with kids and the cloves got doubled...sorta, and it gave the cookies an even richer spice taste. They came out perfect.

Pumpkin Wheat Honey Muffins

I have made these 2x already and both batches were great. The 1st batch I had a bit more pumpkin and my cooking time increased accordingly. The 2nd batch was to the recipe and they were great. They are nice and moist and were good on day 2 & 3.

Slow Cooker Pepper Steak

The previous reviewers were all right on. My husband LOVED it. I did add the extra thickening, and I also waited until closer to the end of cooking time to add the peppers. I used a whole sweet onion and 1 red, 1 yellow and 2 green peppers. I served it over rice and my husband was very pleased.

Molasses Sugar Cookies

Not so good. They looked pretty as the pick, but now that I use less shortening in my cooking, I was overwhelmed with shortening. They dried a bit too crunchy and I took them to a cookie walk today and they were among the leftover cookies.

Pumpkin Pancakes

I liked the less-sweetness aspect of this recipe. There was enough pumpkin flavor, but I used 1 tsp cinnamon and 1 tsp pumpkin pie spice. It needed just a touch more spice. I don't know if I will make them again, but i enjoyed them for breakfast today.

Zucchini and Potato Bake

I added a sweet onion to the mix. This came out moist and tasty. I like the way the breadcrumbs thickened the juice. My husband needs his food to be moist to aide in swallowing...this dish was perfect for him.

Slow Cooker Italian Beef for Sandwiches

I put this in the slow cooker before I went to bed. I woke up to the most delicious smelling meal. I made the recipe as listed, but I used a blended italian seasoning for the dried oregano and dried basil. My family really enjoyed this meal and asked to have it again.

Banana Oatmeal Bread

The flavor was good and it was very moist. I had a problem with the raisins settling and i lost the bottom of the bread when I removed it from the pan. My co-workers enjoyed the flavor & texture. I made the reipe as listed but also added walnuts.

Peanut Butter Fudge IV

I've never made or eaten PB Fudge, so I'm not certain how it turned out. It has a good taste, and just a bit crumbly. I used crunchy PB. I think I'll try another recipe next time & compare.

Coconut Rolled Sugar Cookies

What a nice change of pace. The coconut influence is enjoyable. I didn't have candied fruit in the house, so I just used walnuts. Then after cutting into slices I sprinkled the remaining coconut on the top of each cookie. I also added a tiny bit more milk based on a prior comment. The dough was easy to handle and get into the 3 rolls. I'll make them again.

Pumpkin Fluff Dip

We realized we didn't have the right sized ingredients, so we used 2 cups of fresh cooked pumpkin, 1 small box of pudding and 1/2 of the whipped topping. It worked great & has a great conversation at Thanksgiving as something new on the snack table.

Cranberry Pumpkin Muffins
