Cajun Crawfish and Shrimp Etouffe

loved it! Want to remember exactly what I did because I want to make it again. Boyfriend Martin loved it too, which was surprising. Used butter and rice flour and mixed the 2 together for only about 5 minutes. Added 2 cloves garlic, one onion and celery and cooked for 5 minutes stirring. Added 1 yello pepper. When it started to look brown and like it could burn I added 1 cup of veggie stock and a carton of grape tomatoes each cut in half. Added 1t hotsauce, a splash of Lea & Perrins and a generous shake of paprika. Let cook, covered on low for about 10 minutes, adding a bit of extra water once. Added frozen crab from the market and kept cooking for about 10 minutes, then added fresh scallops and let cook for 6 minutes. Adjusted spices (more hot sauce and lea & perrins and a bit of salt and pepper) and added fresh parsely. Done! and soooo goood!

Sage Pork Chops

loved it! such a nice sage flavour. I used only 1/4 teaspoon of salt alongside 1 teaspoon of sage and 1 teaspoon of pepper on 2 large bone-in chops. 2 cups of beef stock and cooked covered for 45 minutes after adding the stock. Just under 2 tablespoons of butter. What really made me happy was the gravy! I took the advice of other cooks and added 2 tablespoons of cornstarch mized with 2 tablespoons of cold water and it worked out so well! It didn't separate and it had so much flavour. This is amazing for gluten-free gravy... a miracle! Thank you for this recipe. Will make again many times.

Lamb Chops with Balsamic Reduction

awesome! Will certainly make again! Used a non-stick pan. Was quick and easy. Served with roast squash, baked potato and green beans, but I think next time I will try rice and cooked spinach or broccoli... the sauce was soooooo amazing!

Baked Orange Salmon with Fennel

This recipe sounded really neat, but tasted even better than I expected. I did not have the Old Bay seasoning, so I added a pinch of salt, pepper, paprika, mustard and celery seasonings to the fennel as it sauted in the oil. I used rainbow trout and cooked it for 15 minutes. Very moist and tasty.

Oven Baked BBQ Ribs

awesome! Have made twice, with great success each time. I halved the salt. I added ~1tsp garlic powder The first hour I covered with tin foil. Added all sauce by 2 hours. So good with mashed potatoes!

Cornish Game Hens with Garlic and Rosemary

Very good! -only used 2 game hens but kept the wine stock amounts the same as in recipe. -only used 12 garlic cloves -remember to allow the hens to defrost of frozen -served with mashed potatoes, fiddleheads and roasted carrots

Exquisite Pizza Sauce

I had all of the ingredients on hand apart from the anchovy paste, so I didn't use it, but otherwise I followed the recipe exactly. It was awesome! I thought that it made just the right amount for 2 nights of pizza for my boyfriend and me. Will certainly make again!!

Parsley Spinach Chicken Stew

awesome! Such healthy comfort and really tasty and healthy!! Very easy and little cleanup. I made changes based on the suggestions of others: -used 2 tsp paprika instead of tumeric -added garlic powder -added a bay leaf -used ketchup instead of tomato paste and added about 3T -added 2 carrots -added 1 extra cup of water Served with brown rice, which went really well. started the rice just as I finsished browning the chicken. I just cooked the stew for however long it took to cook the rice (~40 minutes) and this was perfect!

Braised Balsamic Chicken

awesome! Must make a again. I used this recipe as a rough guide. Used 2 large chicken breasts, 1 onion, 2 cloves garlic, 2 T olive oil, 1/2 big can of diced tomatoes, good big swig of balsamic vinegar, generous couple of pinches of italian herbs, added one can of artichoke hearts. cooked for 20 minutes after braising, uncovered, and chicken was nice and tender. Served with greenbeans and rice. Boyfriend loved it.

Baked Pork Chops II

We thought this tasted great and we would like to have it again soon. Served it with baked potatoes, grilled zucchini and a salad and this worked well. As per others suggestions, I added a tsp of Lea & Perrins, a little bit of tabasco, celery seasoning and garlic powder. I also only cooked it for 45 minutes. Thanks for the recipe!!

Mexican Baked Fish

Awesome! Will make again! Have decided to be stingy with my '5 star' ratings, but this one came close. Very unique. Very easy! Served with guacamole and low-fat sour cream. Used Talapia and a mix of cheddar, mozz and Mont. Jack cheeses. Thanks for this brilliant idea that we will forever more call our 'fish nachos'!!!!

Cranberry Muffins

Great recipe! I have celiac disease, so I had to use a gluten-free flour. I used brown rice flour and substituted it in directly for wheat flour (same proportions). I changed nothing else about the recipe, and was delighted to have fluffy, delicious gluten-free muffins!!! (trust me, not all gluten-free muffins and fluffy) Will make again - thanks! may add lemon like other reviewers suggest next time. and possibly some extra cranberries too.

Easy Flat Iron Steak in Wine Sauce

Excellent! Steak was so moist, and cooked just right (between medium-rare and medium) when I followed the reciped timing exactly. Yayyy! I added garlic and shallots when I added the wine. The flavour was great!

German Red Cabbage

loved it! I did not have a cheesecloth, so I just ground the allspice and clove and it worked well. This tasted great and I will make it again and again... I must remember thought that it is too strong to be considered to be a 'side dish' in the meal... it works better as a glorified condiment :)

Mashed Potato 'n' Parsnip

I think that the carrot I used must have been to big, because all we could taste was the carrot. I will definately make this again, but I think I will sub and extra potato or parsnip for the carrot and omit the sugar

Cranberry Pork Chops II

awesome! Will make regularly. I used fresh cranberries, cooked for 40 minutes and added a little extra bit of water at the end (as suggested in recipe). Pork was cooked just right. Used a non-stick frying pan. Served with steamed veg and a baked potato and my boyfriend and I were both really happy with this meal! Thanks!

this was good, and my guests asked for the recipe the next day. It is a nice alternative for when I am craving avocoado but I want something slightly different than traditional guacamole.
