Sweet Corn Tomalito
Had some difficulty with cooking it in the micro... Next time I'll just pop it into the veg steamer or slow cooker. Got fluffy and cooked on edges...soupy in middle. hmm, tastes wonderful tho!

Butternut Squash Supreme
Definate change...steam the butternut...it is delicate squash that holds its flavor and form better if steamed. I added steamed carrots for a difference in texture...I love adding depth and adding extra veggies does that.

White Chicken Enchilada Slow-Cooker Casserole
bland. Sorry...I like a little kick in my food. Adding hot stuff to the top didnt work...
