Roquefort Pear Salad
Very easy to make and Very Yummy!! I used Bosc pears, red onions, feta cheese, and spinach leaves as subsitutes (I figured Id get more nutrients from the spinach.) The viniagrette is delicious. I would let it sit in the salad for a while before serving though because the vinegar taste/smell is quite strong. I followed the advice of others and added a tsp of water to the pecan/sugar mix and let my pecans cool on a greased cookie sheet. Keep a close eye on the pecans when you caramelize them, they tend to burn easily.
