Big Fat Fluffy Yummy Biscuits
Brigid's Blackberry Pie
Mom's Birthday Pie
My yummy dinner.
About this Cook
I'm married to the most wonderful man alive. Becoming a mom has been then greatest job I could have ever imagined. I love my life, family, and dog (my other baby).
My favorite things to cook
I enjoy making things that taste really good. Staying at home has given me more time to bake, which is not only fun, but therapeutic. We end up giving a lot of it away though. Goodies are good in your belly, but not for your belly :) Troy is the "baked goods guy" at work. He is very well liked, lol. Cooking is not so much about the challenge, but more so a great outcome.
My favorite family cooking traditions
I love to make my family their favorite meals for their birthdays.
My cooking triumphs
Getting my former picky eater hubby (he's a straight up meat and potatoes guy) to not only eat his veggies, but actually like them. That was HUGE!
My cooking tragedies
I was making baked chicken with artichokes, and I didn't have the right type of wine. So I just used what I had. Needless to say the sauce came out tasty, but very purple. Not so pretty to look at.

Sorta Salisbury Steak
Very tender! It reminded me of my mom's cube steak, but this was much simpler. Mom does it on the stove top and cooks for about an hour instead of two. I felt that the seasoning would be lacking so I added salt and pepper to the steak and seasoned the flour with salt pepper and about 1/2 ts of garlic powder. Also included mushroom when I added the onion. We enjoyed the gravy with rice.

Brigid's Blackberry Pie
Everyone raved! Best pie ever. Perfect consistency. People kept asking how I got a berry pie to not be runny. Will use this recipe again. I was worried about it coming out too sweet so I only used only 1/2 a cup of sugar. It was perfect! I also used frozen berries because it's November, but I can't wait for summer when I can use fresh. I also ended up having to crank up the oven to 350 after first hour to brown the crust. It ended up baking to close to 2 hours before it was perfect. Brushed the crust with an egg yolk and one TB of water and then sprinkled with sugar. So delicious. Thanks for the recipe
