Pumpkin Chocolate Chip Cookies III
These were super yummy! I took the advice of someone else and replaced the oil with applesauce and they came out really moist and delicious! I used mini chocolate chips and only used a single cup of them, two cups would have been a chocolate chip overload. :) I also added some ginger, nutmeg, and cloves which gave them an extra nice taste. This is worth making again!

Made this for a dinner with friends and we all loved it! We actually ended up cooking it in the crock pot with a can of chicken broth for about 3 hours prior to the dinner. This left the chicken super moist and easy to pull apart. The corn tortillas add a nice sweetness to them that I don't think flour would. All and all a really easy recipe that was yummy! I will be making this again!

Cucumber Tomato Salad
Pretty good. The dressing did taste a little more watered down than I was hoping for but it was still a good side dish.
