Best Buttercream Frosting
This turned out great! I substituted powdered sugar because anytime I cream regular sugar into butter its grainy. The milk and flour mixture needs to be whisked constantly and it comes together very fast so don't walk away! No ball is formed. It just gets thick. Vigorous whisking takes care of the lumps.

Fast and Delicious Black Bean Soup
Delicious! This was a great way to use up all the extra ham from Easter. I followed the recipe exactly except for squeezing some lime juice on top and it turned out soooo good!

Avocado Dessert
This is weird but good! I "creamed" the avocado with sugar and vanilla extract in a food processor and then gradually added soy milk until it was a pudding consistency. I put some whipped cream on top and its perfect! My husband keeps staring at it like he wants some but he's too weirded out by the green color! I think its a pretty green.
