Grandma's Famous Salmon Cakes

I changed this one around a bit. I used a 10 oz can of salmon (because that what I had) and 1 egg. Added fresh chopped green pepper, old bay seasoning and sprinkled some corn meal then mixed and sprinkled some more until batter stuck together. Baked @ 425 until light brown. It browned on both sides too.

Baked Tortilla Chips

I used the 6" corn tortillas, cut them into quarters and baked them about 25 minutes for them to turn out crunchy. I also but meat and cheese on them and baked them for about 5 minutes more so that the cheese would melt. I served them with homemade guacamole and salsa too. They are great because the don't break like the store bought chips do. Some were browned but, they were all delicious! Oh my god we are so full!

Pignoli Cookies II

They taste absolutley great! I tried this batch twice, once with Odense & then a double btach with Solo almond paste. Odense's batch was rounder and the Solo's were flatter. They do take about 20 munites to bake for them to be brown. Let them cool all the way before taking them off and they wont stick. I used non stick foil. They are a little messy. Who cares! Just wear an apron and get over it! They are great cookies either flat or fluffy!

Caramels

It tastes great but, takes forever to make. Rome wasn't built in a day either. Right? I stirred for alteast 1 1/2 hours until it finally reached 250 degrees. This is my first time making caramel too. They were a bit too stiff for me, but everyone else absolutely loved them. I just put a piece on a spoon and let it sit in my coffee to soften for a couple of seconds. Make sure you wrap them in wax paper to store them. I tried putting pieces in those little cute petite four paper cups and putting them on a platter and then in a zip lock bag. It makes them start to soften on the top too much. Not sure why? Odd?, but I ate them too!
