Pumpkin Pancakes

Made these with fresh pumpkin and buttermilk (so I left out the vinegar). It made quite a bit and I was glad because I wanted to freeze some for later. Good recipe. Thanks!

My daughter and I made this recipe just as written with the only adjustment being that we made buttermilk with 1cup milk mixed with 1Tbsp lemon juice, let it sit about 5min. to make "buttermilk". It smells so good. The crust is nice and crispy and the inside is so soft and flavorful. Thanks for sharing this recipe!

Cowboy Oatmeal Cookies

The basic recipe was good for me, I just don't care for butterscotch so I substituted chocolate chips. Some said their cookies were soft but mine were nice and crunchy which is how I like them.

Southwestern Chicken Barley Soup

Very good soup! I did need to swap kidney beans for black beans and chopped jalapeno's instead of chili's so that I didn't have to go to the grocery store. Made it for dinner for company, everyone enjoyed it, we added tortilla chips instead of crackers and had some velveeta/salsa dip on the side, some mixed that into the soup too.
