About this Cook
I am a 22-year-old mother of one (#2 due @ Christmas!). I work 40 hrs a week and teach music (violin, piano, and guitar) lessons to people of all ages - of course children being my main clientele. My SO is a SAHD, but looking for work as this will be my 2nd birth in less than 18 months and I'm getting a little burnt out!
My favorite things to cook
I don't necessarily -like- to cook. My SO is actually a cook, so what the hell am I doing in the kitchen all the time?! AH! I do enjoy finding flavorful Vegetarian dishes that satisfies my SO's appetite (since he usually comments that "A little chicken in this...."). Ugh. =)
My favorite family cooking traditions
My grandmother, when her health was strong, was the baker and cook of the family. Through her, my mother took the cooking and my aunt took the baking. Between the three, leftovers are always in abundance... until the day after holiday of course.

Polish Style Lasagna
I made this last week with just the bottom layer of lasagna noodles because of issues with my water supply. My SO and my 1 year old thought it was amazing. I used homemade mashed potatoes. Definitely a keeper.

Easy Mashed Potato and Roasted Vegetable Enchiladas
I did not enjoy this dish very much at all by itself. I had already planned to serve with Spanish rice, re-fried beans, and a nice whopping dollop of sour cream. When all these came together in one bite, it was amazing. For the rice I used remainder of roasted veggies & salsa and just heated with leftover rice.

Apple Cinnamon Oatmeal Bread
This bread was awesome. I used 1 pkt of maple & brown sugar instant oatmeal, which is all I had on hand. I also added approx. 1 C of chopped apple as we don't use chunky applesauce. I baked in a bundt cake pan and sprinkled with powdered sugar. Will ABSOLUTELY make again and again!
