Quick and Easy Pimento Cheese
Way too good to be so easy!!! I haven't had pimento cheese in months since I moved from NC to PA and didn't have my favorite grocery store deli pimento, but this is just as good!! I used Hellman's low fat mayonnaise and it is fantastic. Even with having to shred the cheese myself, it still only took 5 minutes! Costs way less than I paid before and makes a ton more! I serve it with baguette slices or bagel crisps.

Swiss Chicken Casserole II
This was so easy and so delicious! I used the milk, but I think I will try the white wine. I also used herbed cream of chicken soup. I would also suggest adding a bag of broccoli. Your kids probably won't even notice the vegetables!

Kielbasa Stew
Things I changed: I used tomato sauce instead of soup, low sodium chicken broth instead of beef, did not add any extra salt, used turkey kielbasa. I also added in a can of corn and a can great northern beans (I don't know how much substance the soup would have had without them, but they were great in it!) I also doubled it to freeze half after I made it the first time! It is my new favorite soup!
