About this Cook
As a new Mom I'm always on the hunt for healthy but not too time consuming resipes. I love to feed just about everyone when I get the chance and am particularly well known for my muffins and cookies which I alway have on hand. I like to bring them with me to playgroups so finding peanut free recipes has also beome a quest.

Peanut Butter Carrot Cookies
Great idea to do the carrot, I'm always looking for ways to make snacks for my toddler more nutritious! I apologise if this offends but I played around with this recipe quite a bit. I bake a lot of cookies so I set out to fix the crumbling issue the other posters commented on and the turned out fantastic. Got my toddlers seal of approval. Here's what I did. 1/2 cup butter slightly cooler than room temp so still firm but able to be cut easily 1 cup brown sugar 3/4 cup peanut butter 2 eggs no milk 1 3/4 cups blended whole wheat flour 1/4 tsp salt 1 tsp baking powder 1 3/4 1 generous cup of grated carrots bake @ 375 until golden around the edges and they look dry on top. My oven (gas) took around 15 mins. Cheers! 1 cup semisweet chocolate chips

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)
Great comfort food. Quick to make and so yummy! I made a few minor changes; I left out the curry powder as I planned to feed it to my toddler (she loved it by the way!) and the bouillon granules. I also only had beef stock on hand so I used a carton of that then added water to it just until my veggies were submerged. At the end I pureed it with my hand blender to make it extra smooth and creamy. It was enjoyed by all. Did I mention that it only took 30 mins in total to prepare? I'll be making this again in a pinch!

Whole Wheat Bread III
My first time baking a loaf of bread and it looked so beautiful coming out of the oven I was thrilled! It rose beautifully and after letting it cool I cut a piece and toasted it. It tasted as good as it looked with a satisfying slightly crunchy texture lent by the cornmeal. I was over the moon! That said for those of you like myself who will be oven baking your bread due to lack of a bread machine or pure preference (see review posted by theinsanechef for oven baking recipe changes) As well If you have a kitchen aid Mixer, use your doug hook and general baking directions that can be found at www.ehow.com (how to make doug with a Kitchen Aid Mixer); You'll want to bake it at a lower temp than the recipe calls for and for a little longer. I did 325F for 35 minutes as a previous poster had suggested lowering the temp (her bread was still raw in the middle as well but dark on the outside) and my bread was still a bit raw about a third of the way into the loaf. I would still do the 325F as it came out nice and brown, but I think it could use another 15 minutes. I'll try it and post my results.
