Crispy Lemon Fish Fillets

This was pretty good. The fish coats very well and I didn't have enough of the onions to cover all my fish so I had to improvise. I used flounder and was perfectly cooked in 15 minutes. I could definitely see some more spice added to the coating.

Ten Clove Garlic Marinade

This was really good. I omitted the soy sauce since I feel it over powers every other taste. I only marinated the chicken for a few hours and would expect that the flavor would be much better if done for a whole day.

Chicken Pesto Paninis

I made these for dinner and everyone LOVED them. I couldn't find Focaccia so i used a loaf of Ciabatta and made smaller sandwiches but more of them. I caramelized the red onions just a little and while I was grilling the chicken I grilled the green pepper at the same time. I also don't have a panini maker so I sprayed my grill with cooking spray, put it on low and grilled the paninis.

Nacho Cheese Bites

I gave it 4 stars because I made some changes. I used "Mexican Mix" shredded cheese and added pepper jack. Instead of olives I used jalapenos and I didn't use the egg mixture to close the triangles. They were very spicy and good!

Alfredo Light

This recipe was pretty good. After reading all the reviews about it not getting thick quickly, I decided to add one more tablespoon of flour and one tablespoon or cornstarch. I also added red pepper flakes and much more garlic. It was pretty good!

Southwestern Egg Rolls

These were great. I think they would have been better if I had fried them because I decided to bake them instead. They still came out great though. Next time I'm definitely trying the frying method and adding more jalapenos and cayenne.

Artichoke and Spinach Swirls

These had a great taste. Instead of rolling it, I cut the puff pastry into 9 squares and made pastry triangles with the filling inside. I may use a little less artichoke and little more spinach next time though.

Mini Mexican Quiches

These came out very pretty from the oven, but lacked a lot of flavor. Maybe some sausage or even bacon would liven up the taste a little bit. The crust was great.

Peppy Provolone Slices

These were a huge hit at Christmas. I made some without the jalapenos since some people in my family don't like a lot of spice, but those were the only ones left on the plate. Next time, i might make 2 smaller loaves to make them more bite size.

Double Tomato Bruschetta

This is the best bruschetta I've ever had. I made this for Christmas Day and they were gone in less than an hour. Even the professional chef in the family loved it! I did add a little more garlic and basil than suggested and as another review said, I toasted the bread with a little olive oil to add flavor. Perfect recipe!
