Authentic Enchiladas Verdes
This is the best verde recipe I've ever tried. The freshness really comes through when you use whole tomatillos. Sometimes if I'm not feeling like the heat of 5 serranos I'll modify it to 3. If you're serving people who are really adverse to heat you could decrease the number of serranos further. In any case, this is a crowd pleaser.

Washabinaros Chili
I can't count how many times we've made this chili! We make a large stock pot of this recipe each fall and freeze it in dinner-sized quantities so we can pull it out on the coldest winter days. If you like hot chili this recipe is for you. This stuff will make your face melt, but in such a good way! The recipe has depth of flavor. It is just sweet enough. The coffee and dark beer makes it taste earthy. So many recipes need to be tweaked, but for this one I wouldn't change a thing. Enjoy!
