my mom made this recipe every week when i was growing up in the oven. the chicken was always too dry- I tried it in a slow cooker and it came out MUCH better. if you still want to bake the chicken I recommend putting foil over the pan for all but the last 2 minutes. this will help keep the moisture in.

I LOVE THIS RECIPE. my roommates were laughing at me as I tried to blend the tofu in a magic bullet but then they were grateful when I presented them with a delicious dish. My sister was shocked when I told her she had eaten spinach AND tofu!! This beats any pesto cream sauce out there.

The soup is different than the traditional chicken soup which makes it nice if you are craving chicken soup but dont want something that tastes like campbell's. I will say, however, that the flavors are just a tad off.... I think I should have used a red bell pepper to just add some oomph to it. I used natural creamy peanut butter which didnt have much sugar- this is a MUST
