Maple Dill Carrots

I was a little unsure about the dill - but it complimented the flavor wonderfully. I probably did not put in the entire amount suggested, though.

Jamie's Cranberry Spinach Salad

My sister-in-law is always asked to make the salad for family gatherings, because she makes it "the best." Well, I had the in-laws over for dinner the other night and served this salad (replacing the almonds with pine nuts and leaving out the seeds), and my mother-in-law raved about it and said it was even better than her daughters!! That would cause some family disputes if it got around! :)

Ricotta Gnocchi

This was great! My boyfriend thought I had bought the gnocchi and just made the sauce. It was my first time making anything like this, and it was so easy. The dough was very sticky, and I had a little trouble getting it to roll at first, but finally got the hang of it. I cut the amount of pepper in half since I don't like too much. The sauce was amazing with just enough "ba-zing" to it! Very garlicy, but that's the way we like it! Thanks for the great recipe!

Feta Cheese and Bacon Stuffed Breasts

SO GOOD! I use the already seasoned crumbled feta and leave out the bacon (personal preference). Like another user suggested, I didn't flatten the chicken and roll, but cut a pocket into the chick breast to stuff with the feta. It was really easy to do, and turned out great. I also topped the breast with some capers before serving - got rave reviews!

Hearty Vegetable Soup

Baked Basil Fries

Everyone raves about them! I've made them both ways - fresh cut potatoes and frozen fries. Both are delicious. You just need to weigh healthy vs convenient. :)

Ranch Burgers

I left out the ones (per guest requests), and I used between 1.5 and 1.75lb ground beef. I believe that made the ranch flavor more noticeable (which ws good!) I also used plain bread crumbs instead of crackers. They got rave reviews. Everyone wants the recipe!

Apple Pie by Grandma Ople

This is the first pie I have ever made, and I was pretty nervous. There was no need to be, because this recipe is AMAZING! I added the cinnamon, nutmeg, and vanilla like others suggested. I also just cut slits in the top crust instead of making lattices. I can't wait to make it again, but it will have to be when more people are around so I don't eat the entire thing myself!

Yummy! I used the seasoned stuffing mix and also made the dipping sauce recommended by another reviewer: 1/2 cup light sour cream, 1 tsp mustard, dash of worcestershire, and 1 tbsp of soy sauce They disappear fast!

Pesto Turkey Burgers

These are delicious! I had to make my own basil pesto because I didn't have any, but I think that made the burgers even better. Just mix the below ingredients in a food processor. 3/4 cup fresh basil leaves 1/4 cup grated Parmesan cheese 1/4 cup extra virgin olive oil 1/3 cup pine nuts or walnuts 3 medium sized garlic cloves, minced

Honey Roasted Red Potatoes

My boyfriend and I thought these were delicious! I made a little more of the glaze than called for, just because I knew it would be yummy. The potatoes were soft, but it made them melt in your mouth. SO GOOD!

Campbell's Kitchen Creamy Chicken Enchiladas

It was delicious! The enchilada filling didn't make enough for 10 tortillias, but I didn't have room in the pan for 10 anyway! I also wasn't sure what the difference was between picante sauce and salsa. After some internet searching, I went ahead and used the store brand salsa I had in the pantry. It worked perfectly. I'm a very inexperienced cook, and I found this recipe easy and yummy.
