Turkey Burger Pie

I had to add alot more spices to the turkey, because plain it was very bland. This was, however, very easy and made the kitchen smell great.

Baingan Bharta (Eggplant Curry)

This was so delicious!! My husband, who hates eggplant, even admitted it was tastey. I used canned chopped jalapeno instead of fresh, and that added some great kick. I am adding this to my weekly rotation.

Hamburger Soup III

This was so delicious. I loved that it was hearty but didn't make you feel so full you were sick. I wished I had a big loaf of crusty bread for it - I'll be sure to buy one nex time. Yumm!

Spinach Lentil Soup

Easy to make and I love that I will almost always have all the ingredients on hand. I will probably make this one more in the winter when I want something warm and hearty. I may add more veggies next time as well - some bell peppers or celery perhaps.

Roasted Yams

These are one of my favorite things. I could eat them as a meal anytime. I let them cook for at least 45 minutes - I like them well done, and oddly enough the little burnt pieces are the tastiest! Yummy!

Crunchy No-Fry Chicken

These were simply awesome. I try to be a healthy eater, and these were gone in minutes because my hubby couldn't keep his fingers off of them. I added a bit more hot pepper flakes because we like spicey. :)

BBQ Pork for Sandwiches

This really depends greatly on using an awesome bbq sauce, so choose wisely! I loved the Jack's Smokehouse we used - delicious in a sandwich or over white rice.

These were so delicious! I think I actually prefer them cold - the leftovers out of the fridge the next day seemed to have allowed the flavors to blend. I also sprinkled some parmesan cheese on top. Yummy!

Oriental Cold Noodle Salad

I made this with Pad Thai noodles and that did NOT work out so well. There was just way too much noodle and not enough of anything else. I will try this again with other noodles because I loved the flavor of the dressing.

Juiciest Hamburgers Ever

So delicious! I actually made these on the stove in a skillet and they still came out "fluffy" and delicious. I just used a dash for regular milk because I didn't have anything else, but it worked out great. I will make these again for sure.

My husband can't get enough of this! I prefer it with chunky salsa on top, but he likes it plain. I can't believe I had never even heard of this before - old tortillas will never go to waste again.
