I love love love to cook and bake!! I am constantly trying out new recipes. I have a HUGE collections of cookbooks (I hope one of my two daughters decides they like to cook when they are older..lol) I love to scrapbook and take pictures. Crafts with my children. I work a full time job, 2 part times jobs, and I'm in school (on-line) full time. I'm pretty busy with my children too (basketball, church, homework etc) so I like to use my crockpot and simple recipes as much as possible~~

I was pretty proud of my first successful cheesecake :D mastering the art of grilling :) (ha ha)

All the unsuccessful cheesecakes before I got it right..lol burnt cookies..I hate that. (p.s. I have found the cure is baking cookies on a baking stone has worked amazingly well!!)

Ranch Ham Roll-Ups
I make these for almost every gathering I go to and I never take any home. Everyone loves these little bite sized roll ups! and you can switch up the "fillers". Add different kinds of flavored cream cheese etc. Very versitle! I like to make these at night, roll them up and then stick all of them back in the tortilla bag and stick it in the fridge overnight, then in the morning I take them out and cut the logs and then place them on a festive plate, makes for easier slicing too!

Cheesy Vegetable Lasagna
wow wow wow..this was my very first attempt at making a veggie lasagna. I took some short cuts though to cut on time. I used oven ready lasagna noodles, I used a bag of broccoli coleslaw mix instead of chopping broccoli and carrots, and I chopped my onion, zuchinni, and garlic with my "quick chopper"(chopper that you put over the veggies on cutting board and pound on the top of it...love that thing) This was AWESOME and my family really raved over it. It was a little time consuming for a weeknight meal, but I definately suggest it, however you fix it, and adding your own touches along the way, you know what you like, so add it, or omit it, you'll still be glad you did!!

Baked Ham Sandwiches
I've made these for years. I do however, use the brown and serve dinner rolls in the aluminum pans. Remove all the rolls, leaving them together, slice in half, replace the bottom half back into the pan. "Brush" the butter, mustard sauce on the bottom half, then add shaved ham, shredded swiss cheese and "brush" the remainder of the butter, mustard sauce on the other half of the rolls (on the inside portion) replace the top half onto the sandwiches. Bake at 350 for 15-20, or until cheese is melted and the rolls are slightly brown. TASTEY!!! I have made these several times and taken them to potlucks etc. and they go fast! Oddly enough, they taste a bit like Krystals or White Castle burgers.
