I made this carrot cake and it was awesome!  My sister was in town from Washington last week and picked up a cake for Mom's birthday that was chocolate.  Of course, none of us knew she did not like chocolate and preferred carrot cake......I decided I could find an awesome recipe… MORE

My favorite things to cook
I like to mix it up. I love a good BBQ and spent some time at the World Finals BBQ in Memphis. I enjoy trying any new recipe, punching it up a bit after the first run and experimenting. I love the one pot meals that you can just put anything into.
My favorite family cooking traditions
My Chrismas cookie baking is my favorite. I make trays of cookies as gifts. They look like hell as I have cookie issues but I plug through anyway for the triumph at the end of the day! Another family get together for the holidays is on New Years Day. We exchange gifts with the close relatives and just munch on appetizers and soups all day. As busy as the holidays are, we get together for the end of the season and just relax.
My cooking triumphs
My cooking triumphs are my chili, cheesecake, jambalya, and ribs. What a combo huh?
My cooking tragedies
When my freezer go's down and I end up cooking everything in it. That has happened three times in the 24 years I have been married. What a mess! I cared the least about the meat that was in there but the bell peppers I froze meant more to me. I chopped a bushel of them, froze them on cookie sheets and then put in zip locks. Crazy huh?

Sam's Famous Carrot Cake
This cake was great. I made it as the recipe was printed with one exception. I had no raisens. It baked excellent and was a hit! This was my Mom's birthday cake and she told me she thought the coconut was what made it great!

Beer-Boiled Shrimp
This was a great shrimp recipe. I opted to add garlic and it made the dish.

Slow Cooked Corned Beef for Sandwiches
This was excellent. I read a few reviews and elected to use a crock pot. The only change was I layered sliced onions on the bottom of the crock pot as a rack for the meat. I cooked it over night for 9 hours on low, chilled it the next morning and sliced it after work for sandwiches. I made Reubens and followed the suggestion of coleslaw on some of the sandwiches for something different. It was a hit. I also added the carmelized onions that had cooked with the meat. I also noted that the corn beef was not as salty as I have made in the past. I agree that you do not have to look any further for a corn beef recipe. This is the best!
