Cauliflower Casserole
Bored with the usually vegetables... I tried this cauliflower recipe. Based on the reviews and what I just ate. Even my husband who isn't into new vegs liked it. Parboiling the califlower is a great idea.
Hubby liked the red pepper kick in what is typically a bland veggie. The cheese helped too.
I made this modification to reduce carbs and butter fat. Used crumbled soy chips, typically 8 or 9 carbs in one 1 cup. Reducing the fat will be better next time. I panicked when I saw that the consistency was off and added 1/4c of water. Too much separation. Might try 1 tbsp flour base for the butter.
I know I'll do this again because even with all my mods, it was very edible!
