Baked Asparagus with Balsamic Butter Sauce

The family loved this! I was told to save this recipe 'for company'. I followed the previous suggestions of browning the butter, decreasing the soy sauce & increasing the balsamic vinegar. They added some aged gouda (it's their favorite cheese this week), but they like to add that to everything and I think it would have been a hit without the cheese.

Maple Oat Bread

Excellent! The entire family loved this bread. I used whole wheat pastry flour instead of the white flour and everything turned out great (and a little healthier). This has become the families everyday bread. No more store bought bread. Yeah!!

Refried Beans Without the Refry

Great recipe and so easy! I removed all the onions and peppers, prior to mashing the beans, pureed them with a little of the remaining water and added them back to beans and mashed. I didn't want to lose all that flavor, but my family wouldn't eat them if they were too chunky. I used the leftover cooking water for some rice, and it was soooo good. A great companion for the beans. Thanx for posting the recipe.

Seven Layer Tortilla Pie

This recipe is great! I've made this several times and each time you can do something a little different. My husband likes taco meat added to his. I'm a vegetarian so I like fake taco meat or soyrizo, and any vegetable(s) I have in the house. Try pouring a can of your favorite enchilada sauce over the top before baking, yum!

Roasted Tomatillo and Garlic Salsa

Excellent! Roasting all the ingredients really makes the difference. I used three different types of mild peppers in addition to what was called for in the recipe, and added some cumin and cinnamon. Really worth the time and it keeps really well.

Cornmeal Yeast Bread

Great recipe! The family loved it! I can't wait to try this recipe with some smoked cheddar and mexican spices baked in. However, it's great as is and could be used for sandwiches and just about anything else.

Buttermilk Pancakes I

Excellent recipe! I used Kefir in place of the buttermilk and used at least half whole wheat pastry flour and they were great. I found that if you mix all the wet ingredients first, leave the blender running and add the dry ingredients a spoonful at a time it helps make them fluffy (especially if you use the Kefir and whole wheat flour). My husband and son are hooked and I make these at least once a week. They send their thanks.

Banana Muffins II

Fantastic! My 5 year old son suggested cinnamon, so we added 1 tsp of cinnamon, 1 tsp of vanilla, and 1/2 tsp of nutmeg. My husband said it was the best banana bread he has ever tasted, and then polished off almost the entire batch, much to our son's dismay.

Creamiest Chocolate Mousse

Incredible! Make sure everything, except the cream, is at room temp before starting or the chocolate will not cooperate. If you don't have the alcohol try some vanilla or strong black coffee. I've used dark, semi-sweet and milk chocolates and all were successful.

Day Before Mashed Potatoes

This has become a staple for all holiday meals. I like to use Yukon Golds, but that's just me. This recipe is great as is and very easy to play around with. I've tried different herbs (thyme, roasted garlic and/or rosemary are my favorites) and different cheeses, all of which were successful. And the best part, you make them to the day before. Thanx for posting this recipe!
