Baked Potato Soup

This is a great base recipe! I made it healthier by sauteing the onions and garlic in canola oil, using fat free half and half, and topping it with turkey bacon. I also added a can of corn. So good! My 10 year old had 3 bowls!

Creamy Au Gratin Potatoes

This turned out great! I made it for an Easter gathering and it complemented the ham nicely. It was also gone quickly! I doubled it and made it in a 9 X 13 pan. I had to put a pan underneath it because it started to overflow a little as it cooked, so will probably put it into 2 separate pans next time. I used 11 medium sized potatoes for doubling it, and I also chopped my onions instead of keeping them in rings since my kids are sometimes picky about onions. This is a great side for jsut about any meal! Thanks for the recipe.

Creamy Lemon Pie

I really enjoyed this one. The lemon filling reminded me of the filling in lemon meringue pie. It was also a snap to throw together. Will definitely make this one again when my lemons are in season.

COOL 'N EASY® Strawberry Pie

We enjoyed this pie and it was very easy! Great for a hot day when you don't want to cook. I'd like to try it with different flavors of JELLO, and see if fat free cool whip would work.

Oatmeal Waffles

My family loved this recipe! I made a few changes. I used 1 cup all purpose flour and 1/2 cup wheat flour. I used rolled oats and reduced it to 3/4 cup. I also reduced the butter to 4 T. They were quick and delicious!

Minestrone Soup I

Great! I used half the butter, omited the cabbage and tomato paste, and added zucchini and spinach towards the end. I also cooked the pasta separately and added at the end. It was sooo good!!

Lentil Soup

This was great, however, it needs to be made with broth rather than water. I used diced tomatoes instead of crushed. I also used only 1 T of oil to saute the veggies and added 1 tsp of cumin. Next time I'd like to add a little curry as well. My kids all ate it and some friends loved it too!
