I'm a full time mom of 3 kiddos and a part time RN. I love trying new recipes and am always tweaking them to make them healthier or fit my family's tastes. I also love running, master's swimming and any other physical activity which is good since I love eating!

I love baking homemade bread, my kids can't wait for it to come out of the oven. I also love soups and all types of crock pot recipes!

Making a hot breakfast before school for my kids and a healthy sit down dinner most nights of the week.

I have awesome bread and roll recipes. Friends think I slave over it all day.
My cooking tragedies
When a teenager, I tried to make cornbread, but used baking soda instead of baking powder. It was terrible!!

Baked Potato Soup
This is a great base recipe! I made it healthier by sauteing the onions and garlic in canola oil, using fat free half and half, and topping it with turkey bacon. I also added a can of corn. So good! My 10 year old had 3 bowls!

Creamy Au Gratin Potatoes
This turned out great! I made it for an Easter gathering and it complemented the ham nicely. It was also gone quickly! I doubled it and made it in a 9 X 13 pan. I had to put a pan underneath it because it started to overflow a little as it cooked, so will probably put it into 2 separate pans next time. I used 11 medium sized potatoes for doubling it, and I also chopped my onions instead of keeping them in rings since my kids are sometimes picky about onions. This is a great side for jsut about any meal! Thanks for the recipe.

Creamy Lemon Pie
I really enjoyed this one. The lemon filling reminded me of the filling in lemon meringue pie. It was also a snap to throw together. Will definitely make this one again when my lemons are in season.
