A very good and easy recipe. I made adjustments based on my personal tastes. I like it rich and spicy! So, I used 2/3 cup Dark Brown Sugar instead of white. I doubled the Cinnamon and Ginger, as others suggested. Batter was enough for a loaf and six muffins. Baking time was 1 hour 5 min (loaf) and 25 min (muffins). I used a Molasses Glaze that I will post separately. And topped it all off with chopped candied Ginger. My friends loved it.
